Kale, orange and pumpkin seed salad
Makes 2 large servings.
1 head kale, stem removed and tear in bite-sized pieces
2-3 tbsp hot chili peppers (adjust to taste)
1 bag leafy greens
2-3 cups cherry tomatoes, sliced
1 cup mandarin orange slivers
2 tbsp raw pumpkin seeds
Add kale to a large salad bowl. Sprinkle with hot peppers and add
avocado. Smash the avocado and massage the kale until well coated with
avocado. Doing this helps to breakdown the kale, which tends to be very
“tough”. Add the bag of leafy greens and toss well with kale/avocado
mixture until well coated – I don’t massage the leafy greens because
they are more delicate and they would get bruised. Add cherry tomatoes,
mandarin oranges and sprinkle with pumpkin seeds. Toss again and serve!!
