Lentil soup is one of those recipes that’s easy, quick and cheap to make. Lentils are available in most grocery stores and are high in protein. This is a vegetarian lentil soup recipe that uses plenty of spices to perk up the soup. Enjoy this traditional and warming dish!
- 1 tsp olive oil
- 1 onion, diced
- 1 carrot sliced
- 1 celery stick
- 1 red bell pepper, diced
- 1 red potato
- 1 avocado (sliced for garnishing)
- 4 cups of mushroom or vegetable broth
- 1 cup dry lentils
- 1 tsp of basil
- 1/4 tsp of garlic granules
- 1/4 tsp onion granules
- 1/4 tsp dried thyme
- 1/4 tsp of cumin
- 2 bay leaves
- dash sea salt
In a large pot, saute the onions, bell peppers, potatoes, carrots and celery in the olive oil for 3-5 minutes until the onions are tender.
Add the broth, lentils, spices, bay leaves and salt.
Reduce heat to a simmer. Cover and cook until lentils are soft, about 45 minutes. Remove bay leaves and stir before serving. Taste and then add any other ingredient your palate sees fit.
Garnish with pieces of sliced avocado and VOILA!
