Quinoa Porridge

This yummy quinoa bowl is a great alternative to a Mcmuffin and coffee.  You’ll feel amazing after this nutritious breakfast.

Cook Time: 16 minutes
Yield: 2 servings
Ingredients
  • 1 cup quinoa
  • 2 cups almond milk or hemp milk
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla
  • dash cinnamon
  • 1 cup diced strawberries or blueberries (or both)
Directions
  • In a pot, bring quinoa and 2 cups of non-dairy milk and then simmer until all the milk is absorbed – about 10-15 minutes.
  • In a separate pot, heat strawberries or blueberries, maple syrup, cinnamon and vanilla  over medium heat until strawberries are soft and syrupy – about 10 minutes.
  • Fold cooked quinoa into the strawberry pot mix and enjoy.
  • Feel free to add more maple syrup and milk if need be.
