This yummy quinoa bowl is a great alternative to a Mcmuffin and coffee. You’ll feel amazing after this nutritious breakfast.

Ingredients

1 cup quinoa

2 cups almond milk or hemp milk

1 tbsp maple syrup

1/4 tsp vanilla

dash cinnamon

1 cup diced strawberries or blueberries (or both)
Directions

In a pot, bring quinoa and 2 cups of non-dairy milk and then simmer until all the milk is absorbed – about 10-15 minutes.

In a separate pot, heat strawberries or blueberries, maple syrup, cinnamon and vanilla over medium heat until strawberries are soft and syrupy – about 10 minutes.

Fold cooked quinoa into the strawberry pot mix and enjoy.

Feel free to add more maple syrup and milk if need be.
